The Flat Iron is finely marbled with a dynamic, smooth textured mouth-feel. This cut has quickly become a favorite among our customers and our chefs. Cut from the top blade, its tenderness is considered second only to that of the tenderloin. To its credit, the Flat Iron exhibits a much richer beef flavor.
We recommend serving the Flat Iron cooked rare to medium rare. It pairs well with a sauce or light rub and its versatility allows it to perform equally well in a casual or formal setting.
